What can I do if someone doesn't pay my money back?

Hi. We are currently living out of India and have lended money to few people amounting 5-8 lakh and as part of documentation we have undated cheques and bond papers collected physically by my brothers living in Vizag where we have lended the amount. We have tried multiple ways for lenders to repay the debt they collected including interest which we haven't received for months. Since we are not physically available, we want to know the legal ways to start recovery and if we can submit the cheques (undated) to bank. Will there be any charges deducted by the bank and what is the best way to recover since we are not available physically to fight case in court
